Appears to be a few different ones. Or just look for the fourth addition on the cover? I have read the Kutas book, it has a wealth of good info and recipes. I have not bought it yet but I do have a library card. I agree with Steve I have the 4th edition.. Here is a ebook I have on sausage making..

I have a noob question If your on a limited budget and want to get started, you guys who are all seasoned, what would you order in addition to the grinder and stuffer?

You could start out by buying ground beef and pork from the store, that way your not spending any upfront cash on a grinder. And you can pick up a jerky cannon really cheap to use as a stuffer. Then you can get them at your leisure.. And always keep checking craigslist for deals.. Kelly, if you can get the grinder that Fishawn is talking about from Northern on sale, it will definitely get you started. You can always get the stuffer later. I and others have the same one.
Mine ground about 25 of meat this last weekend. Made 3 of Chivapchichi, stuffed 10 brats and about 5 of mortons into casings. It's a little more work stuffing, but that's why my son and I did it. Easier with two people. Never skipped a beat. What do you think about this one for a starter set up? Fish, sez it werks great I could not find where it said the size of the tubes though Fish what size tube came with it?
Not bad Will do what you need. Just cut your meat in half inch strips, and keep a sharp blade. Yer gonna LOVE this stuff!
Texas Hunters E-book is awesome. A lot simpler than Rytek, though I have and use both. Kel, That's the same grinder I have been using for over 10 years.. Glad you like it It does serve its purpose.. Kelly, that is the grinder that I have Pics to come I think I got it on the 2nd of September, so I would have had it 14 days today It has had some sorta meat, veggies or something running through it 8 or 9 days of the 14 days I have had it Don't have anything bad to say about it yet I actually got 3 jars of smoked-canned salmon for some, which is to die for, so that trade was a "draw"..
That's the one I was referring to too. Watch for it to go on sale. Might not be small enough for snack sticks, but will work for sheep casings. I've used the biggest tube to stuff summer sausage.
It works really well, and have yet to bog it down. Just don't try and cram too big of pieces in it. But I don't cut them as small as Rich said. I could not find the sizes on mine, but here are relevant? Ken's had his for 10 years I have a KA pro. I personally love this mixer so much, I wouldn't dare put it through the torture of grinding and stuffing in fear of breaking it and having to live without it.
As we make all of our own bread products, it would kill us now to have to knead by hand. Fishawn, here is a link for you. He has a free sausage ebook you may want to check out. He's from Australia, and has some very good recipes that I have used and adapted many of them to suit myself. The only problem is, I have the hardest time finding ground kangaroo.

I haven't made sausage from poultry yet. I need too. We were raising slaughter chickens by the hundreds a few years ago, so we had chicken up the yingyang. I don't care for the thighs and wish I had thought about making sausage with them. An awful lot of chicken thighs were going to the beagles back then. I see it's in PDF format now. It didn't used to be. I had to convert it when I downloaded it the first time. If you still have problems, holler and I'll email or post the PDF.
